Safe, Sealed, and Delivered: Lessons from Grab and FoodSHAP

Grab has inked a valuable industry partnership with FoodSHAP—all for the purpose of raising the standard of safety and hygiene in the Philippines especially amidst the challenges of the COVID-19 pandemic.

One result of Grab and FoodSHAP’s ongoing collaboration is the Safe, Sealed, Delivered webinar, which held last June 7, 2021, on the occasion of the World Food Health Safety Day. The roundtable discussion, which was livestreamed on GrabFood PH’s Facebook page, is just a taste of the specialized knowledge that GrabFood merchant-partners can access for free in order to upskill themselves on food safety.

GrabFood merchants can look forward to more educational webinars from Grab and FoodSHAP on food safety and related topics starting this June 2022 all the way up to the end of the year. Lesson 1: How to Avoid Food Contamination

Merchant-partners can start their learning journeys with Grab’s “Prevent food contamination” video and “Prevent Food Contamination” module. These learning resources will impart a better understanding of how food contamination happens, as well as the dangers of cross-contamination.

Important lessons that food entrepreneurs and their staff will learn from this course are how food products are contaminated with harmful microorganisms, chemicals, toxins, or allergens and what the potential sources of contamination may be. These include raw meat that contains bacteria, fresh produce that’s washed with contaminated water, or dirty kitchen tools or utensils that aren’t properly cleaned or dried.

In addition, merchant-partners will learn helpful tips to prevent food contamination, like cooking food at a hot enough temperature and just in time for delivery, buying from reputable suppliers, covering and wrapping food so that it doesn’t grow moldy, and storing fresh food at a cool enough temperature to prevent the growth of bacterial and fungal agents.

Lesson 2: How to Buy and Store Food Safely

There are also learning materials that provide guidance on purchasing and storing food safely, starting with Grab’s “Safely buying and storing food” video. Merchant-partners will come away with useful procurement tips like how often to buy food supplies, how to vet quality ingredients, how to keep track of each food product’s lifespan, how to handle high-risk foods so that they aren’t easily contaminated, how to inspect the food items they buy for their establishments, and how to transport newly bought items at the right temperature.

Merchant-partners should exercise caution about food safety as early as when they’re sourcing raw materials or finished food products for their establishments. For in-depth knowledge about how to procure and store food supplies, be sure to check this course out. 

Lesson 3: Food-Safe Preparation and Cooking Techniques

On the topics of food-safe preparation and food-safe cooking techniques, make sure to also check out Grab’s  “Safe cooking is a hot topic” video and  “Prepare and Cook Food Safely” module. These materials highlight the importance of cooking at high temperatures and understanding which temperatures you need to reach or achieve to safely cook different food items.

Among the concepts that merchant-partners will learn in this course are how germs respond to different hot or cold temperatures, what the “danger zone” temperature range is, and which foods carry a high risk of contamination from germs. The module also provides a list of the right temperature ranges for different foods, how to use special kitchen tools like food thermometers to gauge a food item’s internal temperature while it’s cooking, how to safely store food in refrigerators and chillers, and how to reheat food for safe consumption.
